Indigenous to the Rio Grande Valley, Hatch, New Mexico is known not only for being the largest grower of this chile, but also for its annual two-day celebration. As summer winds down, the clean, crisp air is filled with the smell of chile roasting. We are flying Hatch, New Mexico chile in for our own three-day festival.
